Chunky Winter Vegtable Soup

Winter Soup

I made this last night documenting what I put in as I went, it turned out to be really tasty so I thought I would share the recipe!
2 Large Parsnips
3 Large Potatoes
3 Large Onions
1 Bunch of Celery
2 Carrots
3 Cloves Garlic
Dried Italian Herbs- tablespoon
Fresh Lemon Thyme- tablespoon
Dried Chilli Flakes – pinch
Pinch of Ginseng Spice
Salt & pepper to taste
1 Cup white wine
1 L of veggie stock or until veggies coveredMethod:
Soften onions & garlic in olive oil, then add celery and carrots and white wine for 5mins before adding other ingredients & simmering for an hour or so.
