I thought for those small holders considering getting cattle I would save you some research and compile some information on some of the main breeds here in Australia, most of this information is from the wikipedia :)

Angus - Beef
Angus cattle (Aberdeen Angus) are a Scottish breed of cattle much used in beef production. They were developed from cattle native to the counties of Aberdeenshire and Angus in Scotland,[1] and are known as Aberdeen Angus in most parts of the world.
They are naturally polled (do not have horn) and solid black and or red, although the udder may be white. There have always been both red and black individuals in the population,[2] and in the USA they are regarded as two separate breeds - Red Angus and Black Angus. Black Angus is the most popular beef breed of cattle in the United States, with 324,266 animals registered in 2005.
* Modest or higher degree of marbling
* Medium or fine marbling texture
* 10 to 16 square-inch ribeye area
* Less than 1,000-pound hot carcass weight
* Less than 1-inch fat thickness
* Moderately thick or thicker muscling
* No hump on the neck exceeding 5 cm (2")
* Practically free of capillary rupture
* No dark cutting characteristics

Hereford - Beef
Hereford cattle are a beef cattle breed, widely used both in intemperate areas and temperate areas, mainly for meat production.
Originally from Herefordshire, England, United Kingdom, more than five million pedigree Hereford Cattle now exist in over 50 countries. The Hereford cattle export trade began from United Kingdom in 1817, starting in Kentucky, United States, spreading across the United States and Canada through Mexico to the great beef-raising countries of South America. Today, Hereford cattle dominate the world scene from Australasia to the Russian steppes. Hereford Cattle can be found in Israel, Japan and throughout Continental Europe and Scandinavia.
Hereford Cattle are extremely susceptible to eye cancer or pink eye.

Dexter - Dual Purpose
Dexter cattle are the smallest of the European cattle breeds, being about half the size of a traditional Hereford and about one third the size of a Friesian milking cow. They were considered a rare breed of cattle, until recently, but are now considered a recovering breed by the American Livestock Breeds Consevancy. The Dexter breed originates from Ireland.
Dexters are classified as a dual-purpose breed; used for milk and beef. However they are often listed as a triple-purpose breed, since they are also used for oxen. Management practices vary by breeder and by country. Their versatility is one of their greatest assets, and probably has something to do with the number of countries Dexter cattle are found, including North America, South Africa, Australia, and much of Europe.
The beef produced by Dexters is well marbled and tends to be darker.
The cows are exceptionally good mothers, hiding their calves almost from birth if there is any cover for them to hide. They will produce enough milk to feed 2-3 calves, and often will willingly nurse calves from other cows. They are known for easy calving. This trait, along with the small size of the calf, has produced a small but growing market in the United States for Dexter bulls to breed to first calf heifers among the larger beef breeds to eliminate problems at parturition.

Murray Grey - Beef
Murray Grey is a breed of Australian polled beef cattle that originated in the upper Murray River valley on the New South Wales/Victorian border.
The Murray Grey is known world-wide for the economically important traits of calving ease, feed efficiency, and carcase quality. Traditional butchers prefer Murray Grey beef as its consistent quality and tenderness can be relied upon.
Murray Greys produce marbled beef carcases with intramuscular seam fat of the type that is preferred in Japan and other Asian markets.
In 1967 three carcases were shipped from Australia to the Smithfield Show in the UK where they finished first, second and third in the Commonwealth carcase competition.[5] In Australia Murray Greys have dominated hoof and carcase competitions for many years.[6]
The Murray Grey breed was the largest represented breed at the 2008 Calgary Stampede Carcase Competition. A Murray Grey steer was declared the Grand Champion Carcase there for the second consecutive year.[7]
In 2008 or the first time in the history of the Midland Bull Test and sale in Columbus, Montana, a Murray Grey bull scored a perfect 10 on the genetic test for marbling and a near perfect 9 on the genetic test for tenderness. No bull of any breed has ever performed so well before.[8]
Breed Characteristics include:
Size
Murray Grey cattle are of a moderate size, possess sound structure and have good walking ability. Murray Grey bulls will usually weigh 817 to 1,135 kilograms (1,800-2,500 lbs); cows normally weigh 500-700 kg. They are a true medium-framed animal that can maintain body condition easily, without consuming large amounts of forage.
Calving Ease
Murray Grey calves are small when they are born and quick to gain their feet. Cows are heavy milk producers with good udders and teats. Calves grow quickly and are adaptable to all climates.
Horns
Murray Greys are naturally polled, which is a dominant characteristic that is passed on to their progeny.
Temperament
Murray Greys are docile cattle to work with. The cows are protective of young calves, though.

Jersey - MIlk
Jersey cattle are a small breed of dairy cattle. Originally bred in the Channel Island of Jersey, the breed is popular for the high butterfat content of its milk and the lower maintenance costs incurred by its lower bodyweight, as well as its genial disposition.
The Jersey cow is quite small, ranging from only 360 to 540 kg (800 to 1200 pounds). The main factor contributing to the popularity of the breed has been their greater economy of production, due to:
* The ability to carry a larger number of effective milking cows per unit area due to lower body weight, hence lower maintenance requirements, and superior grazing ability.
* Calving ease and a relatively lower rate of dystocia, leading to their popularity in crossbreeding with other dairy and even beef breeds to reduce calving related injuries.
* High fertility
* High butterfat conditions, 6% butterfat and 4% protein, and the ability to thrive on locally produced food.
* Bulls are also small, ranging from 540 to 820 kg (1200 to 1800 pounds), and are notoriously aggressive.
They are calm and docile animals, but tend to be a bit more nervous than other dairy cow breeds. They are also highly recommended cows for first time owners and marginal pasture.

Galloway - Beef
The Galloway is one of the world's longest established breeds of beef cattle, named after the Galloway region of Scotland, where it originated. It is now found in many parts of the world.
The Galloway is naturally hornless, and instead of horns has a bone knob at the top of its skull that is called a poll. This breed's shaggy coat has both a thick, wooly undercoat for warmth and stiffer guard hairs that help shed water, making them well adapted to harsher climates.
Galloway cattle are know for:
* High Fertility - early working age in bulls, as early as 18 months
* Easy of calving
* Not fussy grazers
* High quality & high yielding carcasses
* Low fat beef

Scottish Highland - Beef
Highland cattle or kyloe are an ancient Scottish breed of beef cattle with long horns and long wavy coats which are coloured black, brindled, red, yellow or dun.
The breed developed in the Scottish Highlands and Western Isles of Scotland. Breeding stock has been exported to the rest of the world, especially Australia and North America, since the early 20th Century. The breed was developed from two sets of stock, one originally black, and the other reddish.
Highlands are known as a hardy breed due to the rugged nature of their native Scottish Highlands, with high rainfall and strong winds. They both graze and browse and eat plants many other cattle avoid. The meat tends to be leaner than most beef, as Highlands get most of their insulation from their thick shaggy hair rather than subcutaneous fat. The coat also makes them a good breed for cold Northern climates.
Highland cattle have been successfully established in many temperate countries. Their hair provides protection during the cold winters and their skill in browsing for food enables them to survive in steep mountain areas.

Brahman - Beef
The Brahman or Brahma is a breed of Zebu cattle originating from South East Asia.
The Brahman has a distinct large hump over the top of the shoulder and neck, and a loose flap of skin (dewlap) hanging from the neck. Their ears are larger than Bos taurus breeds. Bulls weigh 1,600 to 2,200 pounds (800 to 1,100 kg) and cows weigh 1,000 to 1,400 pounds (500 to 700 kg). At birth, calves weigh 60 to 65 pounds (30 to 33 kg). Brahmans are known as a docile, intelligent breed of beef cattle. Brahman cattle can be gray or red color. Their tail switch is black, and they have black pigmentation on their noses, tips of ears, and hooves. They are primarily a horned breed of cattle however there are some bloodlines of Brahman that are naturally polled (without horns).
Brahmans have a greater ability to withstand heat than European cattle. They have more sweat glands, and also an oily skin, thought to help repel pest insects along with a smooth coat. They have a short hair coat. They are also more resistant to parasites and disease. Brahmans have also been extensively crossbred with European cattle in subtropical United States, in Central America and in some tropical areas of the world to gain their advantages in hot climates. Brahman crossed cattle, referred to as F-1 Brahmans, are very popular in the southern 1/3 of the United States and in South America, Asia, and Australia because of the sub-tropical climate. An F-1 Brahman can be a cross between any two unrelated breeds, however it is most popular when crossed with Hereford and Angus.
A Brahman cow is an extremely good mother, offering protection and an abundance of milk for her calves. Brahman calves tend to measure high weights at weaning because of the outstanding milk given by Brahman cows. In some countries, especially in South America, Brahman cattle are used for both milk and beef production.
